This is a an English based forum, please post your questions in English so everyone can help you.

Unfortunately there is no option to use your XZ Premium screen in black and white (I suppose that is what you are asking).

If you are looking to take black and white photos or videos that isn't also available in the camera options, you can however turn color photos in black and white ones with the photo editor in the options of the bottom menu available in the photo screen.

@Sacha06 go to Settings > System > About phone, find the field caller Build number and tap it 7 times. this should unlock Developer options. then go to Settings > System > Developer options, and find a setting called Simulate colour space (it should be in a Hardware accelerated rendering section) and set it to Monochromacy.
